At birth, we are all given a supply of enzyme energy (endogenous enzymes), a supply that has to last a lifetime. The faster you use up the supply, the shorter your life! Your immunity, vitality, longevity, your life – all depend on keeping your body’s enzymes at optimum levels.

How important are enzymes? They digest our food, make it small enough to pass through the minute pores of the intestines into the blood and build it into muscles, nerves, blood, and glands. They assist in storing sugar in the liver and muscles, turning fat into fatty tissue. They aid in the formation of urea, which is eliminated as urine and also aid in the elimination of carbon dioxide from the lungs.

Enzymes build phosphorus into bone and nerve tissue and help attach iron to red blood cells. They are essential in supporting our body’s defense and immune system. They are required for our blood and coagulation, essential for the cardiovascular system, kidneys and liver. Enzymes help with the elimination of toxins. We need them to be able to see, hear, smell, taste, breathe, and move. Just to think and dream requires enzymes. Sexual excitement and activity are dependent on them. In other words, when enzyme activity stops, life stops!

Therefore, it is absolutely imperative for optimum health, that we avoid enzyme depletion!

Unfortunately, the most serious threat we face on a daily basis to enzyme depletion and therefore, our health and well being, is eating cooked and processed foods. Cooking or processing food at more than 118° F. totally destroys the enzymes in the food. As a result, most of us consume an enzyme deficient diet.

In addition, stress, strenuous exercise, pregnancy, frequent colds, exposure to extreme temperatures and fevers also deplete our enzyme accounts. Fried foods, caffeine, alcohol, drugs, tobacco, and other stimulants also draw out tremendous quantities of endogenous enzymes from our body’s reserves.

As a result, a heavy withdrawal of endogenous enzymes are required to help digest most foods that we consume. It’s easy to see how this can lead to enzyme depletion and the resulting chronic health challenges.

There are two sources of enzymes: endogenous, those that originate within our body; and exogenous, those that we ingest that originate from outside the body. There are three classes of these enzymes: metabolic enzymes, which work in blood, tissues and organs and run our bodies; digestive enzymes, that work with the digestive organs which digest our foods; and food enzymes from raw foods which aid in the digestive process.

Digestive enzymes have only three main jobs: digesting protein, carbohydrate and fat. Protease are enzymes that digest protein, amylase digest carbohydrate, and lipase digest fat.

There are only two ways to preserve and replenish our enzyme level:

1) Eat raw foods. By consuming a diet of mostly raw foods, we do not force our body’s enzymes to carry the whole load for digestion, thereby preserving our enzyme levels. Unfortunately, in our society, this is not very practical, and also because of chemical poisoning, pollution and soil exhaustion, our earth can no longer assure us that the foods we eat contain all of the enzymes (or nutrients) that they are supposed to have.
